Coleslaw makes a fantastic summer side dish!  It’s simple to make and full of healthy ingredients to keep your immune system strong (take that COVID-19!).

Recipe: 

1 cup purple cabbage + 1 cup green cabbage, shredded in the food processor

3 medium carrots, shredded

1 T finely chopped red onion

1/4 cup mayonnaise (I love the Primal Kitchen brand)

1 tablespoon Bragg apple cider vinegar

2 t Dijon mustard 

1 t honey

1/4 teaspoon fine sea salt or more to taste

1/4 teaspoon fresh ground black pepper or more to taste

Mix all ingredients in a big bowl and refrigerate for at least an hour so the flavors can combine.
