It’s rhubarb season! 

Rhubarb compote is a family favorite! It’s delicious for breakfast or dessert (over vanilla ice cream).

Many folks are intimidated by these long red stalks but never fear, it’s super easy to make a compote. 

Rhubarb is great for digestion, high in fiber and has valuable nutrients like vitamin K, vitamin C and manganese.  It’s also anti-inflammatory, which is super important with COVID-19. 

To make the compote simply chop 3-4 rhubarb stalks into 1-inch pieces and add to a pot.  Pour in about 1/2 cup water and bring to a gentle boil. Lower heat and simmer for 15 minutes or until rhubarb is very soft.  Add (local unfiltered) honey to taste (it should be a little bitter) and serve warm or cold.
