My family loves homemade muffins so I’m always searching for new recipes that are both healthy and delicious.
Recently I’ve been on a quinoa kick. Quinoa is a good source of protein, fiber, iron, magnesium and a host of other vitamins and minerals. It has a nutty flavor that lends itself beautifully to muffins.
