Or should I say, “Diana, Diana, pumpkin eater.” Honestly, I simply cannot get enough pumpkin this time of year – or squash, for that matter. Pumpkin is chock full of beta-carotene, an antioxidant that may play a role in cancer prevention. These funny-looking orange vegetables are also packed with fiber, which is important for a healthy gut, regular bowel movements, and weight management. What’s more, the scrumptious orange flesh provides vitamin C and potassium, and the delicious little seeds pack magnesium, copper, and zinc!
